Oreo Cookies n' Cream Frosting
Hey Guys, whats up? Are you doing well in this tough time? Its been awhile since I write here. Truthfully, I have a lot of recipes to share but I have been so occupied with my day job as an interior designer cum house renovator. I have started back to office on 4th of May since we are in Movement Control Order (MCO) starting 18th March. It was a tough time for all of us, including me.
Im the kind of person who always goes out most of the time, but had to end up staying 24/7 at home. I felt like i was going crazy, my schedule changed totally. It was really hard at first to reschedule everything, getting used to the new norm. It was challenging to juggle between work, house chores, and taking care of a 3 year old active girl.
Anyway, I hope Malaysia is getting better everyday. I hope other countries will heal too from this pandemic that we are experiencing.
So today I am sharing with you a recipe that is so easy to follow. I created this recipe after try and errors other recipe that could work. However, for me I think this recipe is the best. It's light, not really sweet, it has a little crunchiness from the cookie crumbs, and very tasty.
You can use this frosting to frost cake layers, cupcakes, eat it with an icecream, or some cookies, or even on its own!
Oreo Cookies n' Cream Frosting
Ingredients
250ml Non Dairy Whipping Cream, cold
1/4 cup icing sugar
1 tsp vanilla essence
1/2 cup + 1/2 cup oreo crumbs
Method
1) Take out non dairy whipping cream from freezer and let it melt, but stay cold. About 5-10 mins
2) Place bowl and paddle attachment in freezer to cool while the whipping cream melts.
3) Once the cream is melted or softened, beat cream in the cold bowl with cold paddle attachment in slow speed. Increase speed to medium gradually.
4) Beat until a streaks like forming, stop the mixer.
5) Add in icing sugar and vanilla essence.
6) Beat whipping cream mixture gradually from low speed increasing to high speed until the cream reach its peak or stiff.
7) The cream is stiff once it can hold its shape and does not fall off the spatula.
8) Add in oreo crumbs in 2 batches of 1/2 cup + 1/2 cup. Mix well.
9) Cover bowl with cling wrap and chill in fridge. Only take it out about 5-10 minutes before you need to use it.
Important note:
The coldness of the cream, paddle attachment and bowl are very important to ensure the whipping cream beats well, and will get stiff.
The surface of the counter top should not be warm or hot as well when preparing this cream.
Make sure you are using "NON DAIRY" whipping cream and not the normal dairy whipping cream. This is because non dairy whipping cream is more stable and suitable to be used for cake frosting and not easy to melt, unlike dairy whipping cream.
Use a balloon attachment to whip the cream. Balloon attachment will beat the cream nicely, so the cream will become double of its size and very fluffy.
The leftover frosting must be covered in cling wrap and keep nicely in fridge once cake frosting is done. Do not leave the frosting in a bowl without covered and stay in room temperature for hours. The cream will deflate and not fluffy anymore.
