Fresh Cream Frosting

Did you know? If you are looking for a non sweet frosting, one of the choice would be using Fresh Cream. What is a fresh cream? Fresh Cream / Heavy Cream / Whipping Cream, basically is a thick, delicious dairy or non product and it makes everything taste better. It suits to make a lot of frosting including chocolate frosting, cream cheese frosting and even stand on its own.

Here in Malaysia, I think I am not the only one who is not really a fan of VERY sweet frosting like American Buttercream. Hence, a fresh cream can be a substitute for a very less sweet cream, fresh and still delicious. Why fresh cream?

- lighter taste of cream
- non sweet frosting
- suitable for elderly people or kids

If you haven't know, there are 2 types of Fresh Cream/ Heavy Cream/ Whipping Cream available in Malaysia:

Dairy Fresh Cream




- Normally use to make ganache
- Uses in cheesecake. (Check out my Raspberry Basque Burnt Cheesecake Recipe!)
- Contains 35% milk fat hence it is not suitable to use as a whipping cream on cake
- Easily melt when expose to room temperature
- Can be whipped and use in cooking instead of baking
- It can turn into a liquid form if over beat
- Store in chiller area in refrigerator

Non- Dairy Fresh Cream



- Normally use to make cake or cupcake frosting
- Can be stabilised using stabiliser agents like cornstarch, gelatin, icing sugar and milk powder
- Can be used as a base for chocolate frosting, cream cheese frosting, and others
- Store in freezer area
- Can be whipped to become twice of it's original volume. For example, if you take 1 cup of Non Dairy Cream to whip, you will get 2 cups of whipped fresh cream.
- A chilled bowl and paddle attachment helps this cream to whip better
- Can last longer in room temperature, provided it is stabilised using one of the agents
- Cake frosted with fresh cream need to be refrigerated
- Suitable to make simple flower shape when it is stabilised well
- Only available in local baking ingredients store

I think that's basically the summary for fresh cream. I personally love fresh cream, and most of my customers request fresh cream if the cake is for kids. It can be a little bit tricky to work with sometime (if you are making it for frosting), however, once you mastered the technique, I am sure you will want to use this cream only! Some of the cake that I use fresh cream base, can stay and survive in car temperature all the way from Kuala Lumpur until Seremban, Ipoh and others.
