Nutella Cheesecake Bar
Hi Everyone
People must be wondering, why on earth am I so kind to give away or *whispering* sharing the secret of where I got my recipes? The answer is *drum rolls*, truth be told, I don't really have time to bake anymore. I try squeeze some time but my day job is taking up 70% of my time now. If you haven't know, I am a professional Interior Designer/ Renovator. I am working with a renovation company and boy currently I am so busy.
I have one landed house extension from two storey to become three storey house, an office renovation at a factory, and a kitchen extension work for another house. And, not to mention that apart from all that, I need to follow up, meet up and prepare quotations for other potential clients. MashaAllah, I am so grateful for the job that I have.
Yesterday I baked Nutella and Mars Cheesecake Bar. (I will share Mars Cheesecake Bar recipe in another post) . I have been baking this cheesecake since 5 years ago, and in fact, these two are one of the first thing on my menu. They are DELICIOUS, truly tasty, delightful and something that you can enjoy with your friends and family with!
Best part? they are SO EASY to make, or in Malay, they call it "kacang pis". Hahaha. Jokes aside, I am dead serious, they are easy to make. I believe you can add this to your menu during Hari Raya or Christmas Eve, or Deepavali or CNY or during your little one's birthday and who knows soon someone start to order from you, and you will find yourself becoming a baker and make a lot of money, Ka-Ching! Here's the recipe:
Nutella Cheesecake Bar
Original recipe from Sally's Baking Addiction, with my tweak ;)
Ingredients
1 and 1/2 cup crushed oreos
5 tbs (75g) melted butter
450g cream cheese, soft at room temperature
1/4 cup castor sugar
1 large egg
1 tsp vanilla extract
1 jar of 375g Nutella spread (I use about 3/4 of the jar)
Method
Prepare 8 inch x 8 inch x 2 inch height baking tin, lay aluminium foil on the tin with overhang on four sides. Preheat oven to 180c.
1. Melt butter (can be any brand, I am using Anchor butter this time)
2. Pour melted butter in crushed oreos. If your nearby baking shop does not have any packed crushed oreos, you can pulse around 20pcs normal oreos on blender. Mix well.
3. Pour butter and oreo mixture into prepared baking tin, spread evenly as a nice base to the cheesecake.
4. Bake for 9-20 minutes in a preheated oven. My oven (SHARP) bakes for 9 minutes only. After done, take out baking tin and let it cool.
5. Meanwhile, using electric mixer, beat together cream cheese (I am using Anchor brand), sugar, egg, and vanilla extract. At first batter will be very curdle and lumpy, but keep on beating on high speed until batter is smooth and lump free, about 10-15 minutes.
6. take 1/2 tbs or 1 tbs or nutella and mix together in cheese cake mixture. Mix well until fully combined.
7. Pour cheesecake on cool oreo crust. Spread evenly.
8. Take a dollop of nutella and drop on evenly spread cheese mixture. Repeat for few times.
9. By using a knife or an offset spatula, make swirls on your nutella. You can be creative.
10. Bake cheese cake for 20-30 minutes. My oven (SHARP) bakes for 20 minutes only. The cheesecake is done once you notice light brown colour on the cheesecake edges.
11. Let baked cheesecake cool at room temperature for 5 minutes and put it in the fridge (chiller area) for at least 4 hours before take it out from the baking tin. Carefully unwrap the aluminium foil.
12. Enjoy the dessert!!
Additional Info
CREAM CHEESE brand can be from any brand. I normally use Tatura however, Tatura was sold out so I bought Anchor cream cheese. Make sure it is not a cream cheese for savoury. Cream cheese for savoury is very salty and only use for cooking, not baking.
PURE BUTTER can be optioned to "spread butter" like Farm Cows, Twin Cows, Buttercup etc. I am using Anchor brand this time but using normal spread butter wont effect a thing. You're welcome.
OREO COOKIES can be optioned by using Cream-O cookies as well. It's just less crunchy then Oreo cookies, that's all. If you want to use Oreo cookies, you can get the crushed oreos at your nearby bakery ingredients shop! (save time)
